Prepare work area

Stack the wonton wrappers on a clean cutting board. Using a sharp knife or pizza cutter, cut each wrapper into quarters (triangles) or strips depending on desired chip shape. Keep cut pieces covered with a damp kitchen towel to prevent drying while you work.

Heat oil

Pour the oil into a medium heavy-bottomed skillet or saucepan to a depth of about 1/2 to 3/4 inch (enough to shallow-fry) OR heat in a deep pot if you prefer deep frying. Heat over medium-high until the oil reaches approximately 350°F (175°C) on a thermometer. If you don't have a thermometer, test by dropping one wonton piece in — it should sizzle immediately and float up quickly.

Fry chips

Working in small batches (6–8 pieces at a time depending on pan size), carefully add wonton pieces to the hot oil in a single layer without overcrowding. Fry, stirring gently and flipping with tongs or a slotted spoon, until golden and crisp, about 30–60 seconds per side (total 1–2 minutes) — they cook very quickly. Remove with a slotted spoon to a paper towel–lined baking sheet to drain.

Season

While still hot, sprinkle the fried wonton chips evenly with kosher salt, ground black pepper, and the optional granulated sugar if using, tossing gently on the tray or transferring to a bowl and shaking to distribute. Allow to cool 2–3 minutes so they crisp fully.

Hold for service

If not serving immediately, arrange chips in a single layer on a wire rack placed over a baking sheet and keep in a warm (not humid) oven at 200°F (95°C) for up to 20–30 minutes to maintain crispness. Avoid covering or stacking while warm.

Sweet Thai Chili Sauce (Side)

If using store-bought sauce, transfer 1 cup to a small dipping bowl. If making a simple homemade version: whisk together 1 cup sweet chili sauce (or 1/2 cup sugar, 1/2 cup rice vinegar, 2 tsp sambal or red pepper flakes, 1 clove minced garlic, 1 tsp cornstarch mixed with 2 tsp water, simmer briefly until slightly thickened). Taste and adjust spice or sweetness. Pour into a small serving ramekin.

Garnish the sauce ramekin with a lime wedge on the side if desired. Serve alongside the warm wonton chips for dipping.
