    Prepare vegetables and ham

    Dice the green and red bell peppers into small (about 1/4-inch) pieces. Dice the red onion and ham into similar small pieces so they cook evenly.

    Heat a 10-inch nonstick or well-seasoned skillet over medium heat. Add 1 tablespoon butter and 1 teaspoon olive oil to the pan; the oil helps prevent the butter from burning.

    When the butter foams, add the diced bell peppers and red onion. Sauté, stirring occasionally, for 3–4 minutes until the peppers begin to soften and the onions turn translucent.

    Add the minced garlic and diced ham. Cook for another 2–3 minutes until the ham is warmed through and the vegetables are tender-crisp. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Transfer the filling to a bowl and set aside. Wipe the skillet clean with a paper towel if you prefer a cleaner pan for the eggs.

Omelet base

    Crack the 3 large eggs into a mixing bowl. Add 2 tablespoons whole milk, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper.

    Whisk vigorously until the mixture is homogenous and slightly frothy, about 20–30 seconds. This adds air for a light texture.

    Return the skillet to medium-low heat and add 1/2 tablespoon butter. Swirl to coat the pan and melt the butter without browning it.

    Pour the beaten eggs into the pan and let sit undisturbed for about 20–30 seconds until the edges begin to set.

    Using a spatula, gently pull the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Repeat around the pan 2–3 times to create layers and even cooking. Continue until the top is mostly set but still slightly moist, about 1–2 minutes total from pouring.

Assemble & finish

    Sprinkle the warmed ham and pepper-onion mixture evenly over one half of the omelet.

    Evenly distribute 3/4 cup shredded sharp cheddar over the filling.

    If the omelet is still quite runny on top, cover the pan with a lid for 30–60 seconds to gently steam and finish melting the cheese.

    Carefully fold the empty half of the omelet over the filling using a spatula to form a half-moon. Let cook for 15–30 seconds more to seal and heat through.

    Slide the omelet onto a plate. Dot with 1/2 tablespoon butter on top to add gloss and flavor (optional). Sprinkle the sliced chives or green onions over the omelet.

    Serve immediately with optional hot sauce or salsa on the side.
