Melon & Mix-ins

    Prepare the melon

    Wash and pat dry the melons. Cut cantaloupe, honeydew and watermelon into uniform 1-inch cubes. Place cubes in a large chilled bowl and gently toss to combine; chill briefly if your kitchen is warm.

    Toast pecans

    Heat a small dry skillet over medium heat. Add pecans and toast, stirring frequently, until fragrant and slightly darker, about 3–4 minutes. Transfer to a plate to cool so they do not continue cooking in the hot pan.

    Crisp the pancetta

    In the same skillet used for pecans (wipe if necessary), add diced pancetta and cook over medium heat until the fat renders and pieces are crisp, about 6–8 minutes. Use a slotted spoon to transfer pancetta to a paper towel-lined plate to drain. Reserve 1 teaspoon of the rendered fat in the pan (optional) to spoon over greens for extra flavor.

    Assemble greens (optional)

    If using a greens base, arrange mixed baby greens on a serving platter or individual plates. Lightly drizzle 1–2 teaspoons of the reserved pancetta fat (or 1 tsp olive oil) over the greens to warm and perfume them.

    Combine melon and mix-ins

    Add torn mint, toasted pecans and cooled crisp pancetta to the bowl with melon. Gently fold to combine, taking care not to crush the melon.

Mustard Vinaigrette

    In a small bowl or jar, whisk together Dijon mustard, honey, lemon juice and white wine vinegar until smooth and slightly emulsified.

    While whisking continuously, slowly drizzle in the extra-virgin olive oil to create a cohesive vinaigrette. Alternatively, combine all vinaigrette ingredients in a jar, seal and shake vigorously for 20–30 seconds.

    Season the vinaigrette with salt and freshly ground black pepper. Taste and adjust: add more honey for sweetness, more lemon for brightness, or a pinch more salt to bring out flavors.

    Reserve about 2 tablespoons of vinaigrette to dress the greens (if using). Add the remaining vinaigrette to the melon mixture and gently toss to coat evenly. Use only as much dressing as needed to lightly glaze the fruit — the melon should remain fresh and not soggy.

    Transfer the dressed melon mixture to the platter over the greens (or to a serving bowl). Scatter any remaining pecans and pancetta on top and garnish with a few extra mint leaves.
