    Clean and Marinate

    Rinse the gulf shrimp under cold water and pat dry with paper towels. If shrimp are large and unbutterflied, make a shallow slit on the underside to help the marinade penetrate. Place the shrimp in a bowl and add the buttermilk, 1 tsp salt, 1 tsp black pepper and 1 tbsp hot sauce (if using). Toss to coat, cover, and refrigerate for at least 20 minutes and up to 2 hours. Marinating tenderizes the shrimp and helps the breading adhere.

Green Tomato Chutney

    Make Chutney

    While the shrimp marinates, heat 1 tsp olive oil in a small saucepan over medium heat. Add the chopped onion and cook until translucent, about 4 minutes. Add the diced green tomatoes, green chili (if using), grated ginger, brown sugar, and apple cider vinegar. Cook, stirring occasionally, until the tomatoes break down and the mixture thickens slightly, about 8–10 minutes. Remove from heat, stir in lime juice, chopped cilantro, and 1/2 tsp salt. Taste and adjust salt, sugar or lime as needed. Allow chutney to cool; it will thicken more as it cools.

Breading & Frying

    Prepare Breading

    In a shallow bowl or pie plate combine 1 cup all-purpose flour, 1/2 cup cornstarch, 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp dried oregano, 1 tsp salt and 1/2 tsp black pepper. Whisk thoroughly to evenly distribute spices.

    Heat Oil

    In a heavy skillet (cast iron recommended) or a deep frying pan, add about 1/2 cup olive oil (or a neutral oil with an olive oil flavor) to reach roughly 1/4–1/2 inch depth for shallow frying. Heat over medium-high until the oil reaches 350°F (175°C) or a small pinch of flour sizzles immediately when dropped in.

    Dredge Shrimp

    Working in batches to avoid crowding, remove shrimp from buttermilk, letting excess drip off, and dredge each shrimp in the flour-cornstarch mixture, pressing lightly so the coating adheres. Shake off excess and place on a tray while you fry the first batch.

    Fry Shrimp

    Add a single layer of breaded shrimp to the hot oil without overcrowding. Fry for 1.5–2 minutes per side for medium shrimp (16–20 count); adjust time for size—shorter for smaller, longer for larger—until golden brown and cooked through (opaque and firm). Use tongs to flip once. Remove to a wire rack or paper towel-lined plate to drain. Repeat with remaining shrimp, adding more oil if needed and reheat oil to temperature between batches.

    Finish

    If desired, transfer fried shrimp to a warm oven (200°F/95°C) while frying remaining batches to keep them crisp. Sprinkle chopped parsley or cilantro over the cooked shrimp and squeeze a little lemon or lime over them just before serving.

Garnish & Serving

    Serve the fried shrimp immediately with spoonfuls of green tomato chutney on the side or drizzled lightly over the shrimp. Offer lemon or lime wedges for extra brightness. Leftover chutney can be refrigerated in a sealed container for up to 4 days.
