For the fried green tomatoes

    Slice tomatoes into 1/2-inch thick rounds, discarding the stem end. Pat slices dry with paper towels to remove excess moisture.

    Set up a dredging station: bowl 1 – flour mixed with 1/2 tsp salt and 1/4 tsp black pepper; bowl 2 – beaten eggs whisked with buttermilk; bowl 3 – cornmeal, remaining flour (if desired), remaining Cajun seasoning (1 1/2 tsp) and optional panko or fine cornmeal for extra crunch.

    Season tomato slices lightly with salt. Dredge each slice first in the seasoned flour (coat and shake off excess), then dip into the egg-buttermilk mixture, then press into the cornmeal mixture to coat thoroughly. Place on a wire rack while you heat the oil.

    Heat a heavy skillet (cast iron recommended) over medium-high heat. Add vegetable oil to reach about 1/4 inch depth and heat until shimmering and a small pinch of cornmeal sizzles immediately (about 350°F / 175°C).

    Fry tomatoes in batches (do not overcrowd) for about 2–3 minutes per side, or until golden brown and crisp. Adjust heat as needed to prevent burning; maintain oil temperature around 325–350°F. Transfer cooked slices to a paper towel–lined plate or oven-safe rack set over a baking sheet and keep warm in a 200°F oven while finishing remaining slices.

For the crawfish and Cajun pan sauce

    Pat crawfish tails dry. If using frozen, thaw and drain well. Season lightly with 1/4 tsp Cajun seasoning and a pinch of salt.

    In a separate medium skillet over medium heat, add olive oil and 1 tbsp butter. When butter foams, add minced shallot and sauté until soft and translucent, about 2 minutes.

    Add minced garlic and cook for 30–45 seconds until fragrant, taking care not to brown.

    Add the crawfish tails and sauté briefly, about 1 minute, just to heat through and pick up flavor. Remove crawfish to a small bowl and set aside.

    To the skillet, add chicken stock, Worcestershire sauce, lemon juice, smoked paprika, hot sauce (if using), and remaining Cajun seasoning. Scrape up any browned bits from the pan and simmer until reduced slightly, about 2–3 minutes.

    Whisk in the remaining 1 tbsp butter and the heavy cream (if using) to finish the sauce; simmer 1 minute until slightly thickened. Taste and adjust seasoning with salt, pepper, or more lemon.

    Return the crawfish tails to the skillet to warm in the sauce for 30–60 seconds, spooning sauce over them. Remove from heat.

To assemble and garnish

    Arrange 2–3 fried green tomato slices per serving on warm plates.

    Spoon several tablespoons of the crawfish and Cajun pan sauce over the tomato slices, spreading the crawfish evenly so each plate gets a portion.

    Garnish with sliced scallions, chopped parsley, and a squeeze of lemon. Finish with black pepper to taste and an optional pinch of flaky salt.

    Serve immediately while hot and crisp.
