    Form Patties

    Lightly portion 1/3 pound (0.33 lb) of ground beef into a loose ball, then gently press into a patty about 3/4 inch thick and slightly wider than the bun. Do not overwork the meat to keep the patty tender. Make a shallow dimple in the center with your thumb to reduce puffing while cooking.

    Season

    Season both sides of the patty with kosher salt and freshly ground black pepper just before cooking.

    Toast Bun & Prep Toppings

    Preheat a griddle or skillet over medium-high heat. Split the bun and toast cut-side down on the griddle until lightly golden, about 1–2 minutes. Arrange lettuce, tomato slices, pickle slices, sliced onion, cooked bacon and cheese near the cooking area so you can assemble immediately when the patty is done.

    Cook Patty

    Add the neutral oil or butter to the hot griddle. Place the seasoned patty on the hot surface. Cook undisturbed for 3–4 minutes until a brown crust forms. Flip and immediately place a slice of cheddar on the patty. Cook another 3–4 minutes for medium (adjust 2–3 minutes for medium-rare or 4–5 for medium-well). If using a lid, cover for the last minute to help melt the cheese.

    Rest & Assemble

    Remove the patty to a plate and let rest 1–2 minutes. Spread a generous layer of Cowhand Sauce on the bottom bun. Place the lettuce leaf on the sauced bottom bun, add the cheesed patty, top with bacon, tomato slices, pickles and sliced onion. Spread a little sauce on the top bun and close the burger. Serve immediately with choice of regular side.

Cowhand Sauce

    In a small bowl, combine mayonnaise, ketchup, Dijon mustard, apple cider vinegar, smoked paprika, hot sauce (if using) and a pinch of black pepper. Whisk until smooth and taste; adjust seasoning with more vinegar for tang or paprika for smokiness. Refrigerate until ready to use. Makes enough for one burger; scale as needed.

    Use the indicated oil or butter to preheat the griddle and prevent sticking. If cooking multiple burgers, add a little more fat between batches and wipe up excess moisture to keep the surface hot for a good crust.
