    Beat eggs

    Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk vigorously until the mixture is uniform, slightly frothy, and the whites and yolks are fully combined (about 20–30 seconds).

    Prepare pan and optional add-ins

    If using add-ins (onion, pepper, mushrooms), heat a 8–10 inch nonstick skillet over medium heat and add 1 teaspoon butter or oil. Sauté chosen vegetables until softened (onion and peppers 3–4 minutes; mushrooms 4–5 minutes). Remove vegetables from the pan and set aside on a plate. Wipe the pan clean if there is excess moisture or browned bits.

    Cook omelet

    Return the pan to medium-low heat and add 1 tablespoon unsalted butter. When butter is melted and foaming but not brown, pour in the beaten eggs and tilt the pan to spread evenly. Let eggs set undisturbed for about 20–30 seconds, then use a spatula to gently lift the edges, tilting the pan so uncooked egg flows underneath. Continue this gently until the top is mostly set but still slightly glossy (about 1–2 minutes total).

    Add cheese and fillings

    Sprinkle 1/2 cup shredded cheese evenly over one half of the omelet. Return any pre-cooked vegetables on top of the cheese if using. Let the cheese melt for 20–30 seconds.

    Fold and finish

    Use a spatula to carefully fold the omelet in half over the cheese. Let cook for another 20–30 seconds to ensure cheese is melted and eggs are cooked through but still tender. Slide the omelet onto a plate, garnish with chopped fresh herbs if desired, and serve immediately with your chosen side.

    Mixed greens salad

    Toss a handful of mixed salad greens with a light vinaigrette (1 tablespoon olive oil, 1 teaspoon vinegar, pinch of salt and pepper) and plate alongside the omelet.

    Hash browns or home fries

    If using frozen hash browns, cook according to package instructions until golden and crispy (usually 6–10 minutes in a skillet or 20–25 minutes in oven). For fresh home fries, cube one medium potato, parboil 5 minutes, then pan-fry in 1 tablespoon oil over medium-high heat until golden and crisp (10–12 minutes), seasoning with salt and pepper. Serve next to the omelet.

    Toast a slice of bread or an English muffin until golden. Butter if desired and serve alongside the omelet.
