Sear the Meat
In a large skillet over medium-high heat, sear the rack on all sides until browned (about 3-4 minutes per side).

Roast the Rack
Transfer the seared rack to a roasting pan and place in the preheated oven. Roast for about 20-25 minutes or until the internal temperature reaches 145°F (63°C) for medium-rare. Remove from the oven and let rest for 10 minutes before slicing.
Farro

Cook the Farro
In a medium saucepan, bring the vegetable broth to a boil. Add the farro and salt, reduce heat to low, cover, and simmer for 25-30 minutes or until tender. Drain any excess liquid if necessary, and fluff with a fork.

Garnish the Farro
Stir in the chopped parsley before serving.
Beets

Roast the Beets
Preheat the oven to 400°F (200°C). Toss the cubed beets with olive oil, salt, black pepper, and balsamic vinegar. Spread them out on a baking sheet and roast for about 30-35 minutes or until tender, stirring halfway through.

Whisk in the butter until melted and smooth. Season with salt and black pepper to taste.
