3. Mix the Filling
In a large bowl, combine ricotta cheese, grated Parmesan cheese, 1 egg, chopped parsley, salt, and black pepper. Mix until well combined.

Using a piping bag or a spoon, carefully fill each manicotti shell with the ricotta mixture.

In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 2 minutes until bubbly but not browned.
6. Add the Milk
Gradually whisk in the milk, stirring constantly until the mixture thickens and comes to a gentle simmer.
7. Finish the Sauce
Stir in grated Gruyère cheese, nutmeg, and salt to taste. Remove from heat once the cheese is melted and the sauce is smooth.

9. Assemble the Dish
In a baking dish, spread a thin layer of Sauce Mornay on the bottom. Place the filled manicotti shells in the dish, then pour the remaining Sauce Mornay over the top.
10. Bake
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until golden and bubbly.
11. Serve
Once baked, let the manicotti cool for a few minutes before serving. Serve with sautéed winter greens on the side.
