Method
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt until well combined. Set aside.
In a large mixing bowl, beat the softened butter with brown sugar and granulated sugar until light and fluffy, about 3-4 minutes.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Mix in the applesauce until fully combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, about 2 inches apart. Bake for 10-12 minutes or until the edges are set and the tops are slightly springy to the touch.
Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
