    Beat eggs

    Crack 3 large eggs into a bowl. Add 2 tablespoons whole milk, 1 teaspoon sea salt, and 1/4 teaspoon freshly ground black pepper. Whisk vigorously until fully combined and slightly frothy (about 20–30 seconds).

    Heat pan

    Place a 10-inch nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt slowly, swirling to coat the pan. The butter should foam but not brown.

    Cook eggs

    Pour the beaten eggs into the warmed skillet and let sit undisturbed for about 10–15 seconds until edges begin to set. Using a silicone spatula, gently push set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue for 45–60 seconds until eggs are mostly set but still slightly glossy on top.

Filling

    Prepare crab and vegetables

    While the eggs begin to set, flake 3 oz of cooked snow crab meat into bite-sized pieces and place in a small bowl. Dice 1/2 tomato (remove seeds if very watery) into small 1/4-inch pieces. Thinly slice 1 green onion (both white and green parts). Cube or slice 1/2 ripe avocado and toss lightly with 1/2 teaspoon fresh lemon juice to prevent browning. Season the tomato and crab lightly with 1/8 teaspoon salt and 1/16 teaspoon black pepper; mix gently to combine.

    Add fillings to omelette

    When the omelette is mostly set but still slightly soft on top, sprinkle 1/4 cup shredded cheese evenly over one half of the omelette. Distribute the flaked snow crab, diced tomato, and sliced green onion over the cheese. Gently place the avocado pieces on top of the other fillings (the avocado is delicate; add at the end to avoid overcooking).

    Fold and finish

    Using the spatula, carefully lift the opposite half of the omelette and fold it over the filling to form a half-moon. Let cook another 30–45 seconds to allow cheese to melt and fillings to warm through, keeping the heat low so the crab and avocado do not overcook. If desired, cover the pan briefly (10–15 seconds) to help cheese melt.

    Plate

    Slide the folded omelette onto a warmed plate. Garnish with microgreens or chopped parsley and a few extra sliced green onion tops if desired. Serve immediately with lemon wedge or hot sauce on the side.
