    Mix and form patties

    Place the ground beef in a mixing bowl. Add 1 tsp salt, 1/2 tsp black pepper and 1 tsp Worcestershire sauce (if using). Gently combine with your hands until just mixed — avoid overworking. Divide into 2 equal portions and form each into a patty about 3/4 inch thick and slightly wider than the bun; press a shallow indentation in the center of each to reduce doming while cooking.

    Cook patties

    Heat 1 tablespoon vegetable oil in a large skillet or cast-iron pan over medium-high heat until shimmering. Place patties in the pan, leaving space between them. Cook without moving for 3-4 minutes until a brown crust forms, flip and cook 3-4 minutes for medium (adjust 2-3 minutes per side for rarer or longer for more done). In the last 1 minute of cooking, place a slice of cheddar on each patty and cover the pan briefly to melt the cheese. Remove patties to a plate and tent with foil to rest while finishing buns and fries.

Buns & Toppings

    Prepare vegetables

    While the patties rest, slice tomato into 1/4-inch rounds and thinly slice the red onion. Wash and pat dry lettuce leaves. Set pickles aside.

    Toast buns

    Spread softened butter on cut sides of the 2 buns. Return the same skillet used for patties to medium heat and place buns cut-side down. Toast 1-2 minutes until golden and slightly crisp. Remove and keep warm.

    Assemble burgers

    Spread about 1 tablespoon mayonnaise on the bottom half of each bun, and about 1 tablespoon ketchup and 1/2 teaspoon mustard on top half (adjust to taste). Place lettuce on the bottom bun, then the cheeseburger patty, tomato slice, onion, and pickles. Close with the top bun and serve immediately.

French Fries

    Prep potatoes

    Wash and peel the 2 russet potatoes if desired. Cut into 1/4- to 1/3-inch sticks for classic fries. Place cut fries in a large bowl of cold water and soak 20 minutes to remove surface starch (you can soak while preparing patties and buns). Drain and pat completely dry with clean kitchen towels or paper towels.

    Optional toss with cornstarch

    For extra crispiness, toss the dried fries with 1 teaspoon cornstarch until evenly coated, shaking off any excess.

    Fry potatoes

    Heat 1 cup vegetable oil in a heavy-bottomed skillet or pot over medium-high heat to about 350°F (175°C). If you don't have a thermometer, test by dropping one small fry – it should sizzle immediately. Fry the potatoes in a single layer in batches (do not overcrowd) for 3-5 minutes per batch, stirring occasionally, until golden and crisp. Use a slotted spoon to transfer fries to a paper-towel–lined tray.

    Season fries

    Immediately sprinkle the hot fries with 1 teaspoon salt and 1/4 teaspoon black pepper, toss to coat. Serve alongside the burgers.
