Prepare watermelon
Trim rind from watermelon and cut into 1-inch cubes until you have about 2 cups. Remove any seeds if present.

Cube pineapple
Peel, core and cut pineapple into roughly 1-inch cubes to yield about 1 cup.

Prep grapes
If grapes are large, halve them lengthwise. Measure 1 cup.

Prep strawberries
Hull strawberries, then halve or quarter depending on size to yield 1 cup.

Slice kiwi
Peel kiwi and slice into 1/4-inch rounds or half-moons to make about 1 cup.

Segment orange
Using a sharp knife, cut away peel and white pith, then segment the orange over a bowl to catch juices. Remove membranes and measure 1 cup of segments.

Combine all prepared fruit in a large bowl and gently toss to mix evenly.

In a small bowl, whisk together lime juice and honey or agave (if using) until combined.

Pour dressing over the fruit and toss gently so fruit is lightly coated. Taste and add a pinch (about 1/4 tsp) of coarse sea salt if desired to enhance flavors.
