    Whisk eggs

    Crack 4 large eggs into a medium bowl. Add 2 tbsp whole milk, 1 tsp salt and 1/2 tsp black pepper. Whisk vigorously until mixture is uniform and slightly frothy, about 30 seconds.

    Prepare pan

    Place a nonstick or well-seasoned 9–10 inch skillet over medium heat. Add 1 tsp neutral oil and 1 tbsp butter. Swirl until butter melts and coats the pan, about 30 seconds. Reduce heat to medium-low so the eggs cook gently without browning quickly.

Filling - shrimp & aromatics

    Season shrimp

    Pat 8 medium shrimp dry with paper towel. Toss with 1/2 tsp kosher salt and 1/4 tsp black pepper.

    Cook shrimp

    In a small skillet over medium-high heat, melt 1 tsp butter. Add the seasoned shrimp in a single layer and cook 1–1.5 minutes per side until opaque and just cooked through. Remove shrimp to a plate and cut each into 2–3 pieces (or leave whole if preferred). Wipe the pan lightly if needed.

    Sauté aromatics

    In the omelette pan (still over medium-low), optionally add 1 tsp oil if surface is dry. Add 1 tsp minced garlic and the sliced 2 green onions (white and pale green parts) and sauté for 20–30 seconds until fragrant but not browned. Add the diced tomato and cook 30 seconds to release a little juice. Transfer mixture to a small bowl to keep warm.

Cooking & assembly

    Pour eggs into pan

    Raise heat slightly to medium. Give the egg mixture a quick whisk, then pour into the prepared omelette pan. Let the eggs sit undisturbed for 10–15 seconds until edges begin to set.

    Stir then level

    With a spatula, gently stir the eggs in the center for 10–15 seconds to let uncooked egg flow underneath. Then tilt the pan and use the spatula to smooth the surface into an even, set base while leaving the top slightly wet.

    Add filling

    Distribute the cooked shrimp pieces evenly over one half of the omelette. Spoon the sautéed garlic, green onion and tomato mixture over the shrimp. Sprinkle 1/2 cup shredded cheddar cheese evenly over the same half.

    Fold omelette

    Using the spatula, gently lift the free edge of the omelette and fold it over the filled half to create a semicircle. Let cook 30–60 seconds more so cheese melts and eggs finish cooking but remain tender.

    Finish and plate

    Slide the omelette onto a plate seam-side down. Top with sliced 1/2 avocado and the extra sliced green onion. Sprinkle chopped cilantro if using. Serve immediately with hot sauce or a lemon wedge on the side.
