Method
Batter
- 1
Combine dry ingredients
In a medium bowl, whisk together 1.25 cups all-purpose flour, 2 tsp baking powder, 2 tbsp granulated sugar, and 1/2 tsp fine salt until evenly blended and aerated.
- 2
Mix wet ingredients
In a separate bowl or large measuring cup, beat 1 large egg lightly, then whisk in 1 cup milk, 1 tsp vanilla extract, and 3 tbsp melted unsalted butter until smooth.
- 3
Make the batter
Pour the wet mixture into the dry ingredients. Stir gently with a spatula or whisk just until combined — small lumps are fine. Do not overmix. Let the batter rest 5 minutes to thicken slightly.
Cooking

- 5
Cook base pancake (face)
Spoon or pour about 1/3 cup of batter onto the hot surface to form a round pancake roughly 4–5 inches in diameter (this will be the face). Cook undisturbed 2–3 minutes until bubbles form and edges look set and bubbles on top begin to pop. Reduce heat slightly if browning too quickly.
- 6
Add face features
Carefully place two small groups of chocolate chips about where the eyes should be while the top is still wet so they sink in slightly. For the smile, arrange banana slices or a curved line of chocolate chips in a smiling arc near the lower third of the pancake. Add one small berry (blueberry or a halved strawberry) for a nose if desired. If you prefer piping detail, use a squeeze bottle of slightly thinned batter or melted chocolate to draw eyes and a smile now.
- 7
Flip and finish cooking
When the pancake's edges are set and underside is golden (about 1–2 more minutes), flip carefully with a spatula. Cook another 30–60 seconds to finish through and set the features. Transfer to a warm plate and cover lightly with foil while you cook remaining pancakes (repeat batter portion and feature placement for each pancake).
Garnish & Serve
- 8
Arrange the pancakes on plates. Use sliced banana halves to form cheeks or hair if you like, scatter fresh berries around, and drizzle about 1/4 cup maple syrup or honey over the pancakes (divide between servings). Sprinkle 1 tsp powdered sugar over the stack for a cheerful finish and add extra chocolate chips for eyes or freckles to taste.
- 9
Serve immediately while warm so chocolate is melty and fruit is fresh. These pancakes are best served within 15 minutes of cooking.
