Espresso & Chocolate

Brew coffee
Brew two shots of espresso (about 60 ml) or prepare 60 ml very strong hot coffee. Place the hot espresso/coffee in a heatproof container.

Make chocolate syrup base
In a small bowl, combine 1 tablespoon unsweetened cocoa powder and 1 teaspoon granulated sugar. Add 2 tablespoons hot water and whisk vigorously until smooth and fully dissolved to form a thick chocolate syrup. Taste and add up to 1 teaspoon optional simple syrup if you prefer sweeter mocha.

Stir the hot espresso/coffee into the chocolate syrup until fully incorporated and smooth. Allow the mixture to cool slightly (2–3 minutes) so it doesn't melt the ice too quickly.

Fill a tall glass with 1 cup of ice cubes. Pour 1 cup cold milk over the ice.

Pour the cooled chocolate-espresso mixture over the milk and ice. Stir gently for 10–15 seconds to combine and chill the drink evenly. Taste and add the optional simple syrup or sweetener if additional sweetness is desired; stir to combine.

Top the iced mocha with about 2 tablespoons whipped cream if using. Finish with a light sprinkle of chocolate shavings or a teaspoon of chocolate drizzle. Serve with a straw and stirrer.
