    Boil liquids and salt

    In a medium saucepan, bring 4 cups water (and 1 cup milk if using 'quick' method) and 1 teaspoon salt to a rolling simmer over medium-high heat.

    Add grits slowly

    Slowly pour 1 cup stone-ground grits into the simmering liquid while whisking or stirring continuously to prevent lumps.

    Reduce heat and simmer

    Immediately reduce heat to low. Cover partially (lid tilted) and simmer gently. For stone-ground grits, cook 20–30 minutes, stirring every 3–5 minutes to prevent sticking. If using quick grits, cook 5–7 minutes and stir frequently. If mixture thickens too much, stir in small splashes of additional milk or water to reach desired consistency.

    Finish with butter and milk

    When grits are thick and tender, stir in 2 tablespoons unsalted butter and 1 cup whole milk (or add 2 tablespoons cream for extra richness). Cook 1–2 more minutes until fully incorporated and heated through.

    Season

    Taste and adjust seasoning with additional salt and 1 teaspoon freshly ground black pepper as desired.

Optional Add-ins / Garnish

    Cheesy grits

    If making cheesy grits, remove pan from heat and stir in 1 cup grated sharp cheddar until melted and smooth. Add up to 2 tablespoons additional milk or cream if needed for a creamier texture.

    Serve

    Spoon grits into bowls or onto plates. Garnish with chopped chives or parsley and a dash of hot sauce if desired. Serve immediately.
