Method
Batter
- 1
Combine dry ingredients
In a large mixing bowl, whisk together 1.5 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon baking powder, and 1/2 teaspoon fine salt until evenly combined.
- 2
Combine wet ingredients
In a separate medium bowl or large measuring cup, whisk 1.25 cups whole milk with 2 large eggs until smooth. Whisk in 3 tablespoons melted unsalted butter and 1 teaspoon vanilla extract.
- 3
Make the batter
Pour the wet ingredients into the bowl with the dry ingredients. Gently fold with a spatula or whisk until just combined — small lumps are fine. Do not overmix; overworking develops gluten and makes pancakes tough. If batter is very thick, add up to 2 tablespoons additional milk to reach a pourable but thick consistency.
- 4
Rest the batter
Let the batter rest for 5–10 minutes at room temperature. This allows the baking powder to activate and the batter to hydrate, producing lighter pancakes.

Portion batter and add blueberries
For each pancake, pour about 1/4 cup of batter onto the hot surface, spacing pancakes to allow spreading. Immediately sprinkle a generous tablespoon of fresh blueberries onto each pancake (or scatter blueberries over batter on the griddle). If using frozen berries, press them gently into the batter to prevent excess bleeding.
- 8
Cook first side
Cook pancakes until bubbles form on the surface and the edges look set, about 2–3 minutes. Check underside with a spatula — it should be golden brown.
- 9
Flip and finish
Flip pancakes and cook the second side until golden and cooked through, another 1–2 minutes. If pancakes brown too quickly, reduce heat slightly. Transfer cooked pancakes to a warm plate and keep loosely covered while you finish the rest.
- 10
Serve
Stack pancakes, drizzle with maple syrup, and dust with powdered sugar if desired. Serve immediately while warm.
