In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until well combined.

Mix Dry Ingredients

In another bowl, beat the eggs and then add the milk and melted butter. Mix until smooth.

Combine Wet Ingredients

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; some lumps are okay.

Combine Wet and Dry Ingredients

Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter.

Preheat the Pan

Pour approximately 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip and cook for another 1-2 minutes until golden brown.

Cook the Batter

Continue this process until all the batter is used, adding more butter to the skillet as needed.

Repeat

While the pancakes are cooking, wash and prepare the fresh berries. Place them in a bowl.

Prepare Toppings

Stack the pancakes on a plate, top with fresh berries, drizzle with maple syrup, and dust with powdered sugar. Enjoy your ON POST pancakes!
