    Prepare Vegetables

    Wash and chop the fresh spinach, mushrooms, onion, and bell pepper into small, bite-sized pieces.

    Beat Eggs

    In a mixing bowl, crack the 3 eggs and add 2 tablespoons of milk. Whisk together until well combined and fluffy.

Cooking

    Sauté Vegetables

    In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, bell pepper, and mushrooms. Sauté for about 5 minutes or until the onions are translucent and the mushrooms are tender.

    Add Spinach

    Add the chopped spinach to the skillet and cook for an additional 2 minutes until the spinach wilts.

    Cook Omelet

    Pour the beaten egg mixture evenly over the sautéed vegetables in the skillet. Season with salt and black pepper. Let it cook undisturbed for about 3-4 minutes, or until the edges start to set.

    Flip and Finish

    Using a spatula, gently lift the edges of the omelet and tilt the skillet to allow any uncooked egg to flow to the edges. When the omelet is mostly set, carefully flip it over and cook for an additional 1-2 minutes.
