    Prepare the Vegetables

    Wash and chop all the vegetables into bite-sized pieces. Slice the bell pepper and zucchini, julienne the carrot, and chop the mushrooms.

    Make the Sauce

    In a small bowl, combine soy sauce, sesame oil, minced garlic, minced ginger, cornstarch, and water. Mix well until the cornstarch is dissolved.

Cooking

    Heat the Pan

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat until shimmering.

    Cook the Vegetables

    Add the chopped bell pepper, carrot, broccoli florets, snow peas, zucchini, and mushrooms to the pan. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.

    Add the Sauce

    Pour the prepared sauce over the stir-fried vegetables. Stir well to combine and cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the vegetables.

Serving

    Sprinkle sesame seeds and sliced green onions over the stir-fry before serving. Serve hot over rice or noodles, if desired.
