    Prepare the sausage casing

    Soak the pork sausage casing in cold water for at least 30 minutes to make it pliable. Rinse it thoroughly inside and out to remove any excess salt.

    Combine ingredients

    In a large mixing bowl, combine the ground turkey, salt, black pepper, garlic powder, onion powder, paprika, crushed red pepper flakes, dried thyme, and dried sage. Mix well until all ingredients are combined evenly.

Stuffing and Cooking

    Stuff the sausage

    Using a sausage stuffer or a funnel, carefully stuff the turkey mixture into the prepared sausage casing. Be sure not to overfill, as the sausage will expand during cooking. Twist the sausages into links of your desired size and tie off the ends with kitchen twine.

    Cook the sausages

    In a large skillet, heat olive oil over medium heat. Once hot, add the stuffed sausages to the skillet. Cook for about 10-12 minutes, turning occasionally, until the sausages are browned and cooked through (internal temperature should reach 165°F).
