Preparation of Filling

    Prepare the Chorizo Filling

    In a skillet over medium heat, cook the chorizo sausage until browned and cooked through, about 8-10 minutes. Remove from heat and let cool slightly.

    Mix Cream Cheese

    In a mixing bowl, combine the cream cheese, aji verde sauce, parsley, chives, garlic powder, and lemon juice. Mix until smooth and well combined.

    Stuff the Olives

    Once the chorizo has cooled, mix it into the herbed cream cheese mixture. Use a small spoon to stuff each olive with the chorizo and cream cheese mixture. Set aside.

    Prepare Breading Station

    Set up a breading station with three shallow bowls: one with flour mixed with salt and pepper, another with the beaten egg, and a third with breadcrumbs.

    Bread the Olives

    Dip each stuffed olive into the flour, ensuring it's fully coated. Next, dip it into the egg, allowing excess to drip off, and finally coat it with breadcrumbs. Repeat until all olives are breaded.

    Heat Oil

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Olives

    Carefully add the breaded olives to the hot oil, a few at a time, without overcrowding. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

    Arrange the fried Scotch olives on a serving platter with aji verde sauce for dipping. Enjoy!
