Salmon Cakes

    Prepare the Salmon Mixture

    In a large bowl, combine the flaked salmon, breadcrumbs, egg, green onions, dijon mustard, lemon juice, salt, and black pepper. Mix until well combined.

    Form the Cakes

    Shape the mixture into patties, about 1 inch thick. You should have about 8 patties.

    Cook the Salmon Cakes

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the salmon cakes. Cook for about 4-5 minutes on each side, until golden brown and crispy. Remove from skillet and set aside.

Arugula Tomato Balsamic Salad

    Prepare the Salad

    In a large bowl, combine arugula and cherry tomatoes. In a small bowl, whisk together balsamic vinegar, olive oil, salt, and black pepper. Drizzle the dressing over the salad and toss gently to combine.

Roasted Pepper Sauce

    Make the Roasted Pepper Sauce

    In a blender or food processor, combine roasted red peppers, garlic, olive oil, lemon juice, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.

Crispy Potatoes

    Preheat the oven to 425°F (220°C). On a baking sheet, toss the diced potatoes with olive oil, salt, and black pepper.

    Spread the potatoes in a single layer on the baking sheet and roast for 25-30 minutes, or until golden and crispy, tossing halfway through.
