Salmon Preparation

Brine the Salmon
In a bowl, combine grape leaves, sea salt, lemon juice, and olive oil. Place salmon fillets in the brine and let them marinate for at least 1 hour in the refrigerator.

Herbed Farro Preparation

Cook the Farro
In a saucepan, combine farro and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes or until farro is tender. Drain any excess liquid.

Cook the Mostarda
In a small saucepan, combine halved grapes, brown sugar, white wine vinegar, and mustard seeds. Cook over medium heat until the grapes soften and the mixture thickens (about 10-15 minutes).
Bell Pepper Coulis Preparation

Roast the Bell Peppers
Roast red bell peppers over a flame until blackened. Place in a bowl and cover with plastic wrap to steam for 10 minutes. Peel the skin and remove seeds.
