Prepare the crust
In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand.

Shape the crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan, ensuring an even layer. Pre-bake the crust in a preheated oven at 350°F (175°C) for 10 minutes, then let it cool while preparing the filling.

Mix the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add granulated sugar and continue to beat until well combined.

Incorporate remaining ingredients
Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition until the mixture is smooth and free of lumps.

Choose your flavor
Select one of the rotating flavors: fruit puree, chocolate chips, or nuts. Gently fold your chosen flavor into the cheesecake filling until evenly distributed.

Pour into crust
Carefully pour the cheesecake filling over the pre-baked crust in the springform pan, spreading it evenly with a spatula.
Baking

Bake the cheesecake
Place the springform pan in the preheated oven at 325°F (163°C) and bake for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool.

After cooling in the oven, remove the cheesecake and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours or overnight before serving.
