Prepare the Chicken
Preheat your oven to 425°F (220°C). Pat the half chicken dry with paper towels. In a small bowl, mix together olive oil, salt, black pepper, garlic powder, chopped rosemary, and lemon juice.

Rub the olive oil mixture all over the chicken, ensuring to get under the skin for maximum flavor.

Place the chicken in a roasting pan and roast in the preheated oven for about 50-60 minutes or until the internal temperature reaches 165°F (74°C).

While the chicken is roasting, peel and cut the rainbow carrots into uniform pieces.

Spread the carrots on a baking sheet and roast in the oven (alongside the chicken) for about 25-30 minutes until tender and caramelized.

In a food processor, combine sunflower seeds, fresh parsley, lemon zest, minced garlic, olive oil, and salt.

Pulse until the mixture is finely chopped and well combined. Adjust seasoning if necessary.
