    Prepare the Potatoes

    Peel and cut the russet potatoes into quarters. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and let them cool slightly.

    Make the Potato Mixture

    In a mixing bowl, mash the boiled potatoes until smooth. Add the diced black forest ham, shredded Gruyere cheese, salt, and black pepper. Mix until well combined.

    Form the Croquettes

    Scoop about 2 tablespoons of the potato mixture and shape it into a small oval or round shape. Repeat until all the mixture is used.

    Prepare for Frying

    Set up a breading station with three dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each croquette first in flour, then dip in the egg, and finally coat with breadcrumbs.

    Fry the Croquettes

    In a large skillet, heat the vegetable oil over medium heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Chipotle Aioli

    Mix the Aioli

    In a small bowl, combine the mayonnaise, minced chipotle peppers, minced garlic, lemon juice, and salt. Stir until well combined and smooth. Refrigerate until ready to serve.

Spicy Honey

    Prepare the Spicy Honey

    In a small saucepan over low heat, combine honey and red pepper flakes. Stir until mixed and heated through, about 5 minutes. Remove from heat and let cool before serving.
