Pork Tenderloin

Sear the Pork
In a hot skillet, sear the pork on all sides until golden brown (about 3-4 minutes per side).

Roast the Pork
Transfer the pork to the oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Let it rest for 5 minutes before slicing.
Herb Breaded Goat Cheese

Prepare the Goat Cheese
Slice the goat cheese into rounds. Set up a breading station with flour, beaten egg, and a mixture of cracker meal and dried herbs.

Bread the Goat Cheese
Dip each goat cheese round in flour, then in the beaten egg, and finally in the cracker meal mixture. Make sure they are well-coated.

Fry the Goat Cheese
In a skillet, heat oil over medium heat and fry the breaded goat cheese until golden and crispy, about 2-3 minutes per side. Drain on paper towels.
Pickled Gold Beets

Cook the Beets
Boil gold beets until tender (about 30-40 minutes). Let them cool then peel and slice.

Pickle the Beets
In a saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a boil, then pour over the sliced beets. Let them sit for at least 1 hour, preferably overnight.

Make the Vinaigrette
In a bowl, whisk together olive oil, apple cider vinegar, honey, fresh thyme leaves, and salt and pepper to taste.

Assemble the Salad
In a large bowl, combine mixed greens and pickled red onions. Drizzle with cherry-thyme vinaigrette and toss gently.
