    Roast the Tomatoes

    Preheat your oven to 400°F (200°C). Slice the medium tomatoes in half and place them cut-side up on a baking sheet. Drizzle with olive oil, and sprinkle with salt and black pepper to taste. Roast in the oven for 20-25 minutes, or until the tomatoes are soft and slightly caramelized.

Grilling the Sandwich

    Prepare the Sourdough Bread

    While the tomatoes are roasting, take the sourdough bread slices and set them on a clean surface. Lay one slice down and layer with the Point Reyes Toma cheese, distributing it evenly. Once the tomatoes are roasted, take them out of the oven, let them cool slightly, and place them on top of the cheese. Add the second slice of sourdough on top to create a sandwich.

    Grill the Sandwich

    In a skillet over medium heat, add a tablespoon of olive oil. Once hot, carefully place the sandwich in the skillet. Grill for about 3-4 minutes on one side, or until golden brown. Carefully flip the sandwich and grill the other side for another 3-4 minutes until golden brown and the cheese is melted.

    Slice and Serve

    Once the sandwich is grilled to perfection, remove it from the skillet and let it cool for a minute. Slice the sandwich in half diagonally and serve hot with any remaining roasted tomatoes on the side.
