For the Poached Eggs

    Prepare the Poaching Liquid

    In a large saucepan, bring 4 cups of water to a gentle simmer. Add 1 tablespoon of white vinegar to the water. This helps the eggs to set quickly when poaching.

    Poach the Eggs

    Crack each egg into a small bowl. Slowly slide the eggs into the simmering water one at a time. Poach the eggs for about 4 minutes until the whites are set but the yolks remain soft. Use a slotted spoon to remove the eggs and set them on a paper towel to drain.

For the Spinach

    Sauté the Spinach

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 minced garlic cloves and sauté for 1 minute until fragrant.
