    Dice the chicken breast, bell pepper, onion, zucchini, and chop the bacon. Rinse and roughly chop the spinach.

    Cook the Bacon

    In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the drippings in the skillet.

    Sauté the Vegetables

    In the same skillet, add olive oil if necessary, then add the diced onion, bell pepper, and zucchini. Sauté for about 5 minutes or until they start to soften.
