    Prepare the Fries

    Preheat the vegetable oil in a deep fryer or large pot over medium-high heat. Once the oil is hot, carefully add the frozen French fries in batches to avoid overcrowding. Fry until golden and crispy, about 3-5 minutes. Remove fries with a slotted spoon and drain on paper towels. Season with salt to taste.

    Make the Bacon Jam

    In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the pan and drain on paper towels. In the same skillet, add the chopped onion and sauté until translucent, about 5 minutes. Chop the bacon and return it to the skillet. Add brown sugar, apple cider vinegar, and black pepper. Stir and cook on low heat until thickened, about 15-20 minutes. Remove from heat and let cool slightly.

Comeback Sauce

    Prepare the Comeback Sauce

    In a medium bowl, whisk together mayonnaise, ketchup, hot sauce, Worcestershire sauce, garlic powder, onion powder, paprika, and salt to taste. Mix well until smooth and refrigerate until ready to use.

    Assemble the Dirty Fries

    On a large serving platter, arrange the hot fries. Spoon the bacon jam generously over the fries, followed by a drizzle of the comeback sauce. Finish with a sprinkle of chopped chives for garnish. Serve immediately.
