Method

Calamari Preparation

    Clean and Cut Calamari

    Rinse the fresh calamari under cold water. Remove the heads and tentacles, and slice the bodies into rings about 1/2 inch thick.

    Soak Calamari

    Place the calamari rings and tentacles in a bowl and cover with buttermilk. Let them soak for at least 30 minutes.

    Prepare the Coating

    In a separate bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Coat and Fry Calamari

    Remove the calamari from the buttermilk, letting excess drip off. Dredge them in the flour mixture, shaking off excess. Fry in batches until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

    Add Tomatoes and Seasoning

    Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer.

    Simmer Sauce

    Reduce heat and let the sauce simmer for about 15-20 minutes, stirring occasionally until thickened.

    Finish with Fresh Basil

    Stir in the chopped fresh basil just before serving. Adjust seasoning to taste.
