    Prepare the English Muffins

    Cut the English muffins in half and toast them until they are golden brown. Spread 1 tablespoon of butter on each half and set aside.

    Bring a pot of water to a gentle simmer. Add 1 tablespoon of vinegar to the water. Crack each egg into a small bowl, then slide it into the water. Poach the eggs for about 3-4 minutes or until the whites are set and the yolks are still soft. Remove them with a slotted spoon and drain on a paper towel.

Hollandaise Sauce

    Make the Hollandaise Sauce

    In a small saucepan, melt 1 cup of butter over low heat. In a separate bowl, whisk together 3 egg yolks, 1 tablespoon of lemon juice, and a pinch of salt. Slowly drizzle in the melted butter while whisking continuously until the sauce is thick and creamy. Adjust seasoning with salt and cayenne pepper to taste.
