Main Ingredients

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Prepare the Potatoes

Scrub the baking potatoes under cold water and pat them dry. Prick each potato several times with a fork to allow steam to escape while baking.

  3. 3

    Bake the Potatoes

Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.

Stuffing the Potatoes

  1. 4

    Remove from Oven

Once the potatoes are baked, carefully remove them from the oven and let them cool for about 10 minutes.

  2. 5

    Cut and Scoop

Cut a lengthwise slit on the top of each potato and gently scoop out the insides, leaving about 1/4 inch of potato on the skin to maintain structure.

  3. 6

    Mix Filling

In a mixing bowl, combine the scooped potato flesh, crumbled bacon, cheddar cheese, sour cream, chopped green onions, salt, and black pepper. Mix until well combined.

  4. 7

    Stuff the Potatoes

Spoon the potato mixture back into the potato skins, mounding it slightly on top.

Finishing Touches

  1. 8

    Add Optional Toppings

If desired, top each stuffed potato with extra cheddar cheese and a sprinkle of paprika.

  2. 9

    Bake Again

Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

  3. 10

    Garnish and Serve

Remove from the oven, garnish with chopped chives if using, and serve hot.
