Rice Preparation

    Cook the Rice

    In a medium saucepan, combine 1 cup of long grain white rice, 2 cups of water, and 0.5 tsp of salt. Bring to a boil over medium heat.

    Simmer the Rice

    Once boiling, reduce the heat to low, cover, and let it simmer for about 18-20 minutes, or until all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

Red Beans & Sausage Preparation

    Sauté the Vegetables

    In a large skillet or pot, heat 2 tbs of olive oil over medium heat. Add 1 diced onion, 1 diced green bell pepper, 1 diced stalk of celery, and 4 minced garlic cloves. Sauté for about 5-7 minutes, or until the vegetables are softened.

    Add the Sausage

    Slice the 1 lb of Andouille sausage and add it to the skillet. Cook for another 5-7 minutes until the sausage is browned.

    Combine Ingredients

    Add the 2 cups of red kidney beans (drained and rinsed if canned), 2 cups of chicken broth, 2 whole bay leaves, 1 tbs of Cajun seasoning, and 0.5 tsp of black pepper. Stir well to combine all ingredients.

    Simmer the Mixture

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, stirring occasionally.

Serving

    Serve the Dish

    Remove the bay leaves from the mixture. Serve the red beans and sausage over the prepared rice, and garnish with sliced green onions and chopped parsley.
