    Soak the Beans

    Rinse the red beans under cold water and soak them in a bowl of water overnight. This helps to soften them and reduces cooking time.

    Chop Vegetables

    Dice the onion, green bell pepper, and celery into small pieces. Mince the garlic cloves.

    Slice Sausage

    Slice the smoked sausage into 1/4 inch thick rounds.

    Cook the Vegetables

    In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté for about 5 minutes until the vegetables are soft and the onion is translucent.

    Add Garlic and Sausage

    Add the minced garlic and sliced sausage to the pot. Cook for an additional 3-4 minutes until the sausage is browned and the garlic is fragrant.

    Drain the soaked beans and add them to the pot. Pour in the chicken broth, and add the bay leaves, Cajun seasoning, salt, black pepper, and red pepper flakes. Stir to combine.

    Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 1.5 hours, or until the beans are tender.
