Method

Omelet Preparation

  1. 1

    Prepare the Crawfish

If the crawfish tails are not pre-cooked, cook them in a saucepan over medium heat for 3-4 minutes until hot. Set aside.

  2. 2

    Prepare the Egg Mixture

In a medium bowl, crack the eggs and add the milk, salt, and black pepper. Whisk the mixture until fully combined and slightly frothy.

  3. 3

    Cook the Omelet

In a non-stick skillet, melt the butter over medium heat. Once the butter is melted and bubbly, pour in the egg mixture. Let it cook for about 1-2 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow underneath.

  4. 4

    Add Crawfish and Green Onion

When the eggs are mostly set but still slightly runny on top, sprinkle the crawfish tails and chopped green onion evenly over one half of the omelet.

  5. 5

    Fold and Finish Cooking

Using a spatula, carefully fold the other half of the omelet over the filling. Cook for an additional 1-2 minutes until the omelet is fully cooked and slightly golden.

  6. 6

    Serve

Slide the omelet onto a plate and, if desired, top with shredded cheese and hot sauce before serving.
