In a bowl, combine crawfish tails, buttermilk, and hot sauce. Mix well to coat the crawfish and let them soak for at least 30 minutes.

In a separate bowl, whisk together all-purpose flour, cornmeal, cajun seasoning, salt, and black pepper until evenly combined.

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Remove the crawfish from the buttermilk mixture, allowing excess liquid to drip off. Dredge the crawfish tails in the breading mixture until fully coated.
