Crawfish Preparation

Breading Mixture

Method

Crawfish Preparation

  1. 1

    Soak the Crawfish

In a bowl, combine crawfish tails, buttermilk, and hot sauce. Mix well to coat the crawfish and let them soak for at least 30 minutes.

Breading Mixture

  1. 2

    Prepare the Breading

In a separate bowl, whisk together all-purpose flour, cornmeal, cajun seasoning, salt, and black pepper until evenly combined.

Frying

  1. 3

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  2. 4

    Fry the Crawfish

Remove the crawfish from the buttermilk mixture, allowing excess liquid to drip off. Dredge the crawfish tails in the breading mixture until fully coated.

  3. 5

    Cook the Crawfish

Carefully drop the coated crawfish tails into the hot oil and fry until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

  4. 6

    Prepare the Fries

In the same oil, fry the frozen French fries according to package instructions until crispy and golden. Drain on paper towels.

Garnishing

  1. 7

    Assemble the Crawfish Fries

On a serving plate, layer the crispy fries and top with the fried crawfish. Sprinkle with chopped green onions and crawfish boil seasoning before serving.
