Preparing the Egg Rolls

    Cook the Boudin

    In a small pot, add enough water to cover the boudin sausage. Bring to a boil, then reduce heat to a simmer and add the boudin. Cook for about 10-15 minutes until it's heated through. Remove from heat and let it cool slightly.

    Once cooled, remove the boudin from its casing and crumble it into a bowl. Chop the green onions finely and add to the bowl. Then, add the cream cheese, garlic powder, salt, and black pepper. Mix everything together until well combined.

    Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to enclose the filling. Use a little water to seal the edges. Repeat until all the filling is used.

    In a deep frying pan or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of the egg roll wrapper in; it should sizzle and rise to the top.

    Carefully add a few egg rolls to the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side until golden brown and crispy. Use a slotted spoon to transfer them to a plate lined with paper towels to drain excess oil.
