Method

Salmon Preparation

  1. 1

    Prepare the Salmon

Rinse the salmon fillets under cold water and pat them dry with paper towels.

  2. 2

    Season the Salmon

In a bowl, mix the olive oil, blackening seasoning, salt, and black pepper. Rub this mixture evenly over both sides of the salmon fillets.

  3. 3

    Cook the Salmon

Heat a frying pan or grill over medium-high heat. Once hot, add the salmon fillets, cooking for about 4-5 minutes on each side, or until the fish is cooked through and has a blackened crust.

Sandwich Assembly

  1. 4

    Toast the Ciabatta Rolls

While the salmon is cooking, slice the ciabatta rolls in half and toast them on a skillet or in a toaster until golden brown.

  2. 5

    Prepare the Sandwich Spread

Spread 2 tablespoons of mayonnaise on the inside of each toasted ciabatta roll.

  3. 6

    Add the Greens and Veggies

Layer arugula on the bottom half of each roll. Slice the tomato and avocado, and add them on top of the arugula.

  4. 7

    Assemble the Sandwich

Place the blackened salmon fillet on top of the veggies, and close the sandwich with the top half of the ciabatta roll.

  5. 8

    Serve

Cut the sandwich in half if desired, and serve immediately while hot.
