Prepare the Salmon
Rinse the salmon fillets under cold water and pat them dry with paper towels.

Season the Salmon
In a bowl, mix the olive oil, blackening seasoning, salt, and black pepper. Rub this mixture evenly over both sides of the salmon fillets.

Cook the Salmon
Heat a frying pan or grill over medium-high heat. Once hot, add the salmon fillets, cooking for about 4-5 minutes on each side, or until the fish is cooked through and has a blackened crust.

Toast the Ciabatta Rolls
While the salmon is cooking, slice the ciabatta rolls in half and toast them on a skillet or in a toaster until golden brown.

Prepare the Sandwich Spread
Spread 2 tablespoons of mayonnaise on the inside of each toasted ciabatta roll.

Place the blackened salmon fillet on top of the veggies, and close the sandwich with the top half of the ciabatta roll.
