    Make quick ginger syrup

    Combine the grated ginger (2 tbs), sugar (0.25 cups) and water (0.25 cups) in a small saucepan. Bring to a gentle simmer over medium-low heat, stirring until the sugar dissolves, then simmer for 4–6 minutes to infuse the ginger. Do not boil vigorously.

    Remove from heat and let the syrup steep for 10 minutes off the heat to deepen the ginger flavor. Strain the syrup through a fine mesh sieve into a small bowl or jar, pressing lightly on the solids to extract liquid. Discard solids. Allow the syrup to cool to room temperature (or chill briefly). This recipe yields about 0.5 cup ginger syrup; you'll use about 4 tbs for the batch.

Juice Blend & Shake

    Combine juices

    In a cocktail shaker or large jar, add the pineapple juice (1 cup), mango juice (0.75 cups) and passion fruit juice (0.25 cups).

    Measure and add the ginger syrup: for this 2-serving recipe add 4 tbs (0.25 cup) of the strained ginger syrup to the juice blend. Taste and adjust — add up to 1 tbs more syrup if you prefer more ginger sweetness.

    Add half of the ice (about 0.75 cups) to the shaker, secure the lid, and shake vigorously for 8–10 seconds to chill and slightly dilute the juices. If you don’t have a shaker, stir the mixture vigorously in the jar.

Assemble & Serve

    Prepare glasses

    Divide the remaining ice (about 0.75 cups) between two tall glasses so each glass has roughly 0.75 cups of ice.

    Strain the shaken juice blend evenly into the two prepared glasses (about 1 cup juice mixture per glass).

    Top each glass with 0.75 cups chilled club soda or chilled non‑alcoholic ginger beer (divide the 1.5 cups total). Gently stir once or twice to combine and to preserve carbonation.

    Garnish each glass with a lime wedge and a mint sprig. Give the lime wedge a quick squeeze into the drink if you like a brighter citrus note.

    Serve immediately. Taste and, if desired, add an extra 1 tsp–1 tbs ginger syrup to any glass for more warmth and sweetness.
