1. Dissolve the sugar
Place the sugar cube in a mixing glass. Add 2 dashes of Angostura bitters directly onto the cube and pour 5 ml (about 1 tsp) of water over it. Using a muddler or the back of a spoon, press and grind the sugar cube until it is fully dissolved and combined with the bitters. (If using 1 tsp simple syrup instead of a cube, simply add the syrup and bitters and stir briefly to combine.)
2. Add bourbon and ice, then stir
Pour 60 ml Angel's Envy Bourbon into the mixing glass with the dissolved sugar/bitters. Add the ice for stirring (about 6 ice cubes). Using a bar spoon, stir gently but firmly for 20–30 seconds (about 20–30 turns) until the mixture is well chilled and slightly diluted. The drink should become clear and cold to the touch of the glass.
3. Strain over serving ice
Place one large ice cube into a chilled old-fashioned (rocks) glass. Using a julep or hawthorne strainer, strain the stirred cocktail over the large ice cube into the serving glass. If you prefer a slightly colder, more diluted drink, you may add one small additional ice cube.

Hold the orange peel with the skin side facing down over the glass about 2–3 cm above the surface. Firmly squeeze or give a quick twist to the peel to express the citrus oils onto the drink, then rub the peel around the rim of the glass to transfer more aroma. Drop the peel into the glass. Add the Amarena cherry on a pick or drop it into the glass beside the large ice cube. Serve immediately.
