    Prepare cheeses

    Remove all cheeses from the refrigerator 30–45 minutes before serving so they come to room temperature. Trim any hard rinds if desired. Cut the aged cheddar and manchego into bite-size wedges or small rectangles. Slice the brie wheel in half horizontally if large so guests can access the creamy center; optionally place one half in a small ramekin. Crumble or leave the goat cheese log whole and provide a small spreading knife.

    Arrange meats

    Fold prosciutto slices into loose ribbons. Stack and fold soppressata/salami into small cones or accordion folds. Roll coppa or capicola into rosettes. Keep portions small and evenly distributed so guests can sample several types without crowding one area of the board.

    Prep fruit & olives

    Wash and dry grapes and figs. Leave grapes on small stems if possible and arrange in small clusters. Halve or quarter figs and slice the apple crosswise into thin rounds right before plating to prevent browning; if desired toss apple slices in a teaspoon of lemon juice to slow browning. Drain olives from their brine, pat dry, and place in a small bowl; drizzle with 1 tbsp olive oil and a pinch of black pepper if desired.

    Prepare nuts & condiments

    Place Marcona or roasted almonds in a small pile or bowl. Spoon whole grain mustard into a small ramekin and place near meats. Spoon savory jam (onion or fig jam) or honey into another ramekin. If using honeycomb, place a small piece on the board near soft cheeses. Garnish with rosemary or thyme sprigs for aroma and visual contrast.

    Toast and arrange breads

    If baguette slices are not toasted, brush lightly with olive oil and toast in a 375°F (190°C) oven 6–8 minutes until crisp and golden. Arrange toasted baguette slices and assorted crackers in small stacks or fanned groups around the board, leaving space near cheeses for spreading.

    Select a large wooden board or platter. Start by placing cheeses spaced apart as anchors. Add small bowls or ramekins for olives, mustard, and jam near appropriate cheeses and meats. Arrange meats in folded groups around cheeses, then fill gaps with clusters of grapes, apple slices, fig halves, and dried apricots. Tuck small piles of nuts and pickles into remaining gaps. Place crackers and baguette slices along the edges. Add rosemary or thyme sprigs and scatter a few loose nuts and fruit to look natural. Add small cheese knives and spoons for spreads.

    Final touches: taste and adjust spacing so nothing overlaps awkwardly. Ensure utensils are accessible and label any common allergens for guests (nuts, dairy). Serve immediately. If not serving right away, cover loosely with plastic wrap and keep at cool room temperature no more than 2 hours for food safety (soft cheeses) or refrigerate up to 1 hour before serving and then remove to warm slightly 20–30 minutes before presenting.
