Prep
Bring cheeses to room temperature
Remove all cheeses from the refrigerator about 30–60 minutes before serving so flavors open up. Pat away any excess moisture with a paper towel.
Slice or format cheeses: cut the aged and mild cheddars into 1/2-inch slices and 1/2-inch cubes; cut Colby into wedges or cubes; slice Monterey Jack into rectangles; cut smoked Gouda into thin wedges. Leave one whole small block or wedge intact for visual height.
Arrange crackers and toast bread: slice the baguette into 1/4-inch slices and lightly toast (5–7 minutes at 375°F/190°C) if desired. Fan crackers on a plate for easy grabbing.
Prepare fruits and nuts: wash grapes and separate into small clusters. Core and thinly slice the apple and toss slices in a bowl with a squeeze of lemon if you expect them to sit more than 15 minutes. Place dried apricots and roasted nuts in small bowls.
Portion meats: fold or roll prosciutto and salami into small bundles or rosettes and stack spicy sausage slices in a lined pile for easy picking.
Assembly
Choose board layout: place three small bowls on the board—one for olives, one for mustard, one for honey. Position them with some space between to anchor the board.
Place cheeses first: arrange cheeses in separate zones across the board to create balance. Mix textures (sliced, cubed, wedge) and vary heights. Leave space between cheeses for meats and accoutrements.
Add meats and savory accoutrements: tuck folded prosciutto and salami near complementary cheeses (e.g., prosciutto beside mild cheeses, salami near aged cheddar). Scatter cornichons and olives in small clusters near meats.
Add fruits, nuts and crackers: cluster grapes and dried apricots in open spaces; fill small bowls with roasted nuts. Fan crackers and place toasted baguette slices along one edge of the board so guests can reach them easily.
