Method
Cheeses
- 1
Bring cheeses to temperature
Remove all cheeses from refrigeration 30–60 minutes before serving and leave them in their wrappers on the counter. This allows flavors and textures to develop.
- 2
Prepare cheeses for serving
Unwrap cheeses just before plating. For Brie, leave whole and place a small knife beside it. For Manchego, cut off a wedge and fan out several thin slices. Crumble or place the blue cheese in a small pile with a cheese knife. Slice the goat cheese log into 1/2-inch rounds and lay them slightly overlapping or leave whole with a spreader.
Fresh Fruit
- 3
Wash all fruit thoroughly. Halve figs or berries if large. Core and thinly slice the pear crosswise to prevent browning (you may toss slices briefly in lemon water for 1 minute if not serving immediately). Arrange grapes in small bunches rather than scattering individual grapes to give the board height.
Dried Fruit & Savory Condiments
- 4
Place dried apricots in a small bowl. Spoon the savory jam into a small serving ramekin or jar and place near the cheeses that pair well (Brie and goat cheese). Put honey into a separate small ramekin and provide a spoon for drizzling.
Nuts & Extras
- 5
If nuts are not pre-roasted, lightly toast walnuts in a dry skillet over medium heat for 3–4 minutes until fragrant, stirring frequently; cool. Place roasted nuts in small bowls or scatter small piles on the board. Drain olives and place in a small dish. Tuck herb sprigs among items for aroma and visual contrast.
Crackers & Bread
- 6
Slice the baguette on a bias into 1/4-inch slices. Lightly toast in a 375°F / 190°C oven for 5–7 minutes until just crisp. Arrange assorted crackers in groups around the board, keeping delicate crackers away from moist cheeses to prevent sogginess.
Assembly & Presentation
- 7
Select a cheese board or slate and start by placing the largest items first: Brie whole, a wedge of Manchego, a mound of blue cheese, and the goat cheese log. Space them around the board to create focal points.
- 8
Fill spaces with bowls/ramekins containing jam, honey, dried apricots, roasted nuts, and olives. Place fresh fruit (grapes, pear slices, figs) in clusters around cheeses so guests can see pairings. Fan sliced Manchego and baguette slices next to each other. Scatter remaining nuts and crackers to fill gaps, creating varied textures and colors.
- 9
Garnish with fresh herb sprigs and provide cheese knives and small spoons next to their corresponding items. Label cheeses if desired. Serve with napkins and small plates.
