Sauté aromatics
In a large heavy-bottomed pot, heat 2 tbsp olive oil over medium heat until shimmering. Add chopped onion and a pinch of salt; cook 6–8 minutes until softened and translucent but not browned. Add minced garlic, grated/ chopped ginger, ground coriander and cumin; cook 1–2 minutes until fragrant, stirring to avoid burning.

Cook carrots
Add the chopped carrots to the pot and stir to coat with the aromatics for 2–3 minutes. Pour in 4 cups of gluten-free vegetable broth and bring to a gentle boil. Reduce heat to a simmer, cover, and cook until carrots are very tender, about 15–20 minutes depending on size.

Finish with coconut milk and seasoning
Stir in 1 cup coconut milk and simmer gently for 3–5 minutes to heat through (do not boil vigorously). Add lime juice, 1.5 tsp salt, and 1/2 tsp black pepper. Taste and adjust seasoning—add more salt, a squeeze more lime, or a pinch more ground spices as desired.

Optional texture adjustment
If the soup is too thick, thin it with up to 1/2 cup additional vegetable broth or water until it reaches your desired consistency.

When serving, ladle soup into bowls and drizzle a little chili oil or sprinkle red pepper flakes if using. Garnish with chopped cilantro and toasted coconut flakes for contrast.
Crostini (gluten-free)

Preheat oven to 400°F (200°C). Arrange gluten-free bread slices on a baking sheet. Brush each slice lightly with olive oil and sprinkle with the 1/4 tsp salt.

Bake for 6–10 minutes, flipping once, until edges are crisp and golden. Remove and let cool slightly. Serve crostini alongside the soup for spooning or dipping.
