Method
Preparing the Wild Rice
- 1
Rinse the Rice
Rinse 1 cup of wild rice under cold water until the water runs clear.
- 2
Cook the Rice
In a pot, combine the rinsed wild rice, 3 cups of water, and 1 tsp of salt. Bring to a boil over medium-high heat.
- 3
Simmer
Once boiling, reduce the heat to low, cover the pot, and simmer for about 45-50 minutes or until the rice is tender and the grains start to burst.
- 4
Fluff the Rice
Remove from heat and let it sit covered for an additional 10 minutes. Fluff with a fork before serving.
Cooking the Steak
- 5
Season the Steaks
Season both York and Strip steaks with salt and black pepper on both sides.
- 6
Heat the Pan
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
- 7
Cook the Steaks
Add the steaks to the hot skillet. Cook for 4-5 minutes on each side for medium-rare, or until desired doneness is reached.
- 8
Rest the Steaks
Remove the steaks from the skillet and let them rest for 5 minutes before slicing.
Making the Mushroom Sauce
- 9
- 10
Add Cream
Pour in 1 cup of heavy cream and bring to a gentle simmer. Cook for an additional 5 minutes until the sauce thickens slightly.
- 11
Finish the Sauce
Stir in the chopped fresh parsley and season with salt and pepper to taste. Remove from heat.
Assembly
- 12
Plate the Dish
On each plate, create a bed of wild rice, then place the sliced steaks on top.
- 13
Serve with Sauce
Spoon the mushroom sauce generously over the steaks and serve immediately.
