Preparation

Roast Garlic
Preheat your oven to 400°F (200°C). Slice the tops off the garlic cloves to expose the tops slightly. Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for 30-35 minutes until soft and golden.

Prepare Roasted Garlic Ricotta
Once the garlic is roasted and cool enough to handle, squeeze the cloves out of their skins into a mixing bowl. Add the ricotta cheese, salt, and black pepper. Mix until smooth and creamy.

Prep Vegetables
While the garlic is roasting, wash and chop the cherry tomatoes in half, slice the bell pepper into thin strips, and slice the mushrooms.

Spread Ricotta Mixture
Spread a generous layer of the roasted garlic ricotta cheese on each piece of flatbread.

Bake Flatbreads
Preheat your oven to 425°F (220°C). Place the assembled flatbreads on a baking sheet and bake for about 15-20 minutes until the edges are crisp and the vegetables are tender.
Finishing Touch

Drizzle with Balsamic Glaze
Remove from oven and let cool for a few minutes. Drizzle balsamic glaze over the top before serving.
